Wild Mushroom, Tomato & Spinach Sprouted Oat Bowl

Packed with rich wild mushrooms, tomatoes, and spinach, this recipe offers a savory twist that will nourish your body.

Ingredients

1 cup (makes 2 servings) of One Degree Organics Sprouted Rolled Oats
1 1/5 cups of water
1/2  cup of sliced baby tomatoes
1/3 cup of spinach
1/3 cup of wild mushrooms
1 tablespoon of everything bagel seasoning
1 teaspoon of salt

 

Directions

In a small pot, bring water to a boil and add salt. Once the water is boiling, stir in the sprouted oats. Reduce the heat and let the oats simmer for 10 minutes with the lid slightly open.

While the oats are simmering, slice the tomatoes and sauté the spinach in olive oil and the wild mushrooms and set aside.

Check the oats for your preferred level of doneness by giving them a quick stir. Once the oats are cooked, serve them in a bowl and top with tomatoes, the cooked spinach and wild mushrooms and sprinkle everything bagel seasoning over before serving.
