Vegan Savory Oat Bowl With Chickpeas, Broccoli & Pepper

Made with our Sprouted Steel-Cut Oats that have a hearty, chewy texture and go especially well with a dash of nutritional yeast for a delicious, cheesy melt-in-your-mouth bite that compliments the roasted chickpeas, steamed broccoli, and diced pepper. And to finish things off, a perfectly paired drizzle of apple cider vinegar and Dijon mustard ties everything together.

Ingredients
(1 Serving)
1/4 cups One Degree Organics Sprouted Steel-Cut Oats
3/4 cups Water
Pinch of salt
1 Tbsp Nutritional yeast
Pinch of Pepper
Topping:
1/4 cup Roasted chickpeas (can roast chickpeas with paprika, salt & olive oil)
1/4 cup Steamed broccoli
1/2 diced pepper
Dressing:
1 Tbsp Apple cider vinegar
1 tsp Dijion mustard
Directions
In a medium pot, bring water and a pinch of salt to a boil. Add the sprouted steel-cut oats, reduce the heat to a lower temperature, and let the oats simmer for 20-25 minutes with the lid slightly tilted.
Make sure that the oats don’t stick to the bottom by stirring occasionally. Once the oats have reached your preferred consistency, add in the nutritional yeast and pepper and mix in well.
Serve your cheesy, vegan steel-cut oats with roasted chickpeas, steamed broccoli, and diced red pepper, and drizzle with dressing before serving.
