Vegan BLT Sandwich: Tempeh, Lettuce & Tomato

One of my favorite quick-to-make lunches is a simple vegan BLT sandwich (we call it a TLT: Tempeh, Lettuce & Tomato!). This easy sandwich is perfect for when you need a fast lunch and can be assembled in minutes.

But speed isn’t the only reason to love the TLT—our vegan BLT sandwich is a wonderfully balanced combination of flavors and textures. Smoked tempeh strips are satisfying swap for the traditional B in BLT. Crispy, smoky, slightly salty, and protein packed.

Paired with creamy avocado, bold, bright tomato, fresh and tender butter lettuce, and sandwiched between hearty slices of Organic Sprouted Lentil Grain Bread, toasted just the way you like it, our vegan TLT sandwich gives you everything you can ask for in only 10 minutes. Whether you have it for lunch or a speedy weeknight dinner, it’s a classic family favorite that never disappoints!

Ingredients

 

2 slices One Degree Organics Sprouted Bread (use your favorite!), toasted
4 slices smoked tempeh, grilled (Lightlife brand Smoky Tempeh Strips is my favorite)
2 leaves butter lettuce
1 medium tomato, sliced
1 Tbsp vegan mayonnaise
1/2 ripe avocado, sliced

Directions

On a grill or in a grill pan, cook smoked tempeh slices until crispy with grill marks on both sides.

Toast your bread as you like it (skip this step if you prefer your sandwiches on fresh-from-the-bag soft slices). Spread vegan mayo on the inside face of one or both slices.

Slice tomatoes and avocado, and tear butter lettuce to size, as needed.

Layer lettuce, avocado slices, grilled tempeh, and tomato slices onto the bottom slice. Lightly season with salt and pepper, if desired, then top with remaining slice of toasted bread. Cut sandwich in half, and enjoy!

Makes 1 sandwich (scale up as needed!)
