Ancient Whole Wheat Tomato Basil Panini

What to make for lunch. . .  I find it to be the hardest meal of the day to cook for. It is hard to stop work in the middle of the day to make something nutritious and tasty. Our go-to quick work lunch is the panini.

A panini takes a regular ordinary sandwich to a whole new level and makes a quick lunch seem to have such a gourmet flair. The combinations are endless. With each visit to the farmers market throughout the year our paninis take on a different twist depending on what is in season.

Start off with Ancient Whole Wheat or any one of our other veganic sprouted breads as the base and experiment away! Here is a favorite of ours:

Ancient Whole Wheat Tomato Basil Panini

INGREDIENTS

4 slices of One Degree Organics Bread
Vegenaise
1 large organic tomato, sliced
1 avocado, sliced
2 dill pickles, sliced
4 organic basil leaves
2 handfuls of spinach
Salt

DIRECTIONS

Preheat panini press.

Spread bread slices with vegenaise and layer the fillings in the two sandwiches, starting with the avocado, followed by the tomato, basil, spinach and pickles. Salt to taste.

Place sandwich on the panini press and toast until golden brown and filling is warmed through.

Slice each sandwich diagonally.
