Sprouted Whole Wheat French Bread

Ingredients

1 1/3 cups One Degree Organics Sprouted Whole Wheat Flour
3/4 cup water, room temperature
1 tsp active dry yeast
2 tsp brown sugar
1/2 tsp salt
3/4 cup organic all-purpose flour
1 1/8 tsp vital wheat gluten

Directions

In a medium-sized bowl, mix water and yeast together. Add brown sugar, salt, and sprouted whole wheat flour and mix thoroughly.

Add gluten flour and mix again. Slowly add the all-purpose flour until the dough forms.

Pour the dough onto a lightly floured surface and knead for about 4 minutes, or until your dough is soft and smooth. You may need to add a little more all-purpose flour as you knead.

Grease a large bowl and place the dough inside. Cover with a cloth and let rise in a warm place for about 1 hour.

Grease a baking sheet or line with parchment paper. Place the dough on a lightly floured surface and knead gently for 2 to 3 minutes to remove any bubbles.

Roll the dough into a long rectangle and then fold over lengthwise. Pinch the seams together and tuck the ends under.

Place the loaf on your prepared baking sheet and cover. Let rise in a warm place for about 45 minutes.

Meanwhile, preheat your oven to 375 degrees F.

When loaf has finished its final rise, use a sharp knife to make several slashes across the top of the loaf diagonally.

Put the baking sheet in the oven, and bake for about 25 minutes, or until golden brown.

Cool before serving.
