Winter White Coconut Layer Cake

This Winter White Coconut Layer Cake is a special holiday recipe that was shared with us by Chef Chloe Coscarelli. We are grateful to Chef Chloe for taking the time to share this wonderful recipe with us and it is a perfect one to use as a showstopper for the holidays

Ingredients (Makes two 8 or 9 inch layers)

CAKE
3 cups One Degree Organics Sprouted Spelt Flour
1 ½ cups sugar
1 ½ teaspoons xanthan gum
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 ½ cups water
1 cup canola oil
¼ cup apple cider vinegar
1 tablespoon pure vanilla extract
1 tablespoon pure almond extract
1 cup shredded coconut

FROSTING
2 cups non-hydrogenated shortening
4 cups powdered sugar
1 teaspoon pure vanilla extract
Water, if needed

TOPPINGS
4 cups shredded coconut
Edible glitter, optional

Directions

Preheat the oven to 350 degrees. Lightly grease two 8 or 9-inch round cake pans and line the bottoms with parchment paper.

In a large bowl, whisk together flour, sugar, xanthan gum, baking soda, baking powder, and salt. In a separate bowl, whisk together water, oil, vinegar, vanilla, and almond extract. Pour the wet mixture into the dry mixture and whisk until just combined. Do not overmix. Gently fold in coconut.

Fill each prepared cake pan evenly with batter. Bake for 30 to 35 minutes, or until a toothpick inserted in the center of the cake comes out dry, with a few crumbs clinging to it. Rotate the cakes halfway through baking time. Let the cakes cool completely before assembly.

To make the frosting – beat shortening in a stand or hand mixer. Add remaining ingredients and beat until smooth. Add water if needed. Add more powdered sugar if needed for ideal frosting texture.

Once the cakes have completely cooled, run a knife around the inside edge of each cake pan to loosen, and gently unmold. Peel off the parchment paper and spread a generous layer of frosting on top of the cake. Place the second cake on top of the first and spread a generous layer of frosting on top. Frost the sides and sprinkle coconut over the entire cake. Dust with glitter if desired.
