It is said that it takes a village to raise a child. That village may look different for each of us, but simple, wholesome food—prepared with and for those we so need and are privileged to have in our lives—is one of the best ways to honor and celebrate the people we love. Not just on holidays, but all year long.

These simple pancakes are easy enough for even little hands to help make in the kitchen and are sure to be a favorite throughout the year. We love them topped with coconut cream and fresh fruit or homemade jam.

Yield: Makes 6-8 pancakes

Ingredients

1 cup One Degree Organics Sprouted Rolled Oats
2 ripe bananas
1 tsp baking powder
1/2 sp vanilla
1/4 tsp salt
3/4 cup soy or almond milk

Directions

Place all ingredients in a high-speed blender and blend until smooth. Add more milk if needed to achieve a pancake like consistency.

Preheat a large frying pan over medium-low heat. Scoop 1/4 cup of the batter and cook for 2-3 minutes on one side, flip and cook until golden brown, about 30 seconds.

Serve warm.
