Kathy’s Baked Oatmeal with Fruit

Breakfast is my favorite meal of the day. I always feel that if I start with a good, nutritious breakfast — like my baked oatmeal with fruit — my day is off to an excellent start. We think our sprouted, organic, Canadian-grown oats are the best.

To save time and enjoy a satisfying breakfast any day of the week, I like to prepare my oatmeal in the evening. When I wake up the next morning, I put it in the oven to bake while I get ready for my day.

You can use fruit or berries that are fresh and in-season, or frozen berries from your freezer, so my baked oatmeal with fruit is an easy breakfast recipe to make any time of year, no matter what you’ve got in the house.

Any leftovers are always delicious with some sliced fresh fruit for another meal.

Ingredients

2 cups One Degree Organics Sprouted Rolled Oats
3/4 cup water
1 1/2 cups plant based milk of choice
1 cup frozen or fresh blueberries (or fruit of choice, chopped apple or pear is a favorite)
1/2 tsp Real salt
1 tsp vanilla
1/4 cup chopped walnuts or nuts of choice
3 Tbsp maple syrup
2 Tbsp chia seeds or ground flaxseeds
1/4 tsp cardamon or cinnamon

Directions

Mix all of the ingredients together, place in an 8 x 8 baking dish and bake at 350 degrees F for 30 – 45 minutes.

Enjoy with fresh fruit, almond butter or plant-based yogurt.
