Vegan Vanilla Oat Ice Cream

With the long days and warmth of summer, ice cream is often the most popular dessert request both of kids and adults alike. Give everyone a guilt-free option by making this tasty vanilla oat ice cream. It is a deliciously simple plant-based way to sweeten hot summer days.

 

Ingredients

1 cup One Degree Organics Sprouted Rolled Oats
2 cans (13.5 ounce (400 ml)) full-fat coconut milk
7 Medjool dates, pitted
A dash of salt
1 tsp vanilla (or ¼ tsp vanilla powder)

Instructions

Blend all vanilla oat ice cream ingredients together until smooth.

Pour blended mixture into a container with a lid to freeze for 5-6 hours (or overnight).

Remove mixture from freezer and allow to thaw just enough to break up into smaller chucks with a knife or spoon.(It should still be hard but easy to break-up.) Transfer into a food processor and blend until smooth. Pour mixture back into the container and freeze for 2-3 hours. Repeat this process of thaw slightly, blend and freeze 1-2 more times until desired texture.

Finish with your toppings of choice.
