Vegan Vanilla Oat Ice Cream
May 17 is a special day for Norway and since I have strong roots with the country on my father’s side it is a great chance to celebrate with healthy treat! Wherever your family tree’s roots grow—or whatever special day you’re celebrating—this tasty vanilla oat ice cream is a deliciously simple plant-based way to sweeten hot summer days.
Ingredients
2 cans (13.5 ounce (400 ml)) full-fat coconut milk
1 cup One Degree Organics Sprouted Rolled Oats
7 Medjool dates, pitted
A dash of salt
1 tsp vanilla (or ¼ tsp vanilla powder)
Instructions
Blend all vanilla oat ice cream ingredients together until smooth (I love my Vitamix! (but any food processor or high-powered blender will do)).
Then pour the mixture into an ice cream maker and churn until it looks like soft serve ice cream. Enjoy some right away or transfer to a container and place in freezer.
Remove from freezer 10 to 15 minutes before you want to enjoy. Top with our Sprouted Oat Quinoa Cacao Granola for extra crunch!
