Baked Cinnamon Donuts with Maple Glaze

Ever since I got a donut pan years ago, I’ve been dreaming up flavor combinations for more baked donuts. To me, one of the best flavors in a donut is maple. And what goes amazing with maple? Cinnamon! Thus, these baked cinnamon donuts with maple glaze were born. Imagine how incredible these will be in the fall with a hot cup of coffee!

– They’re baked! I love deep-fried food just as much as the next person, but it’s a little intimidating. So, these are easily baked in a donut pan (or a muffin tin).

– They’re vegan.

– These donuts are gluten-free! The star of this baked donut recipe is oat flour made from One Degree Organics Sprouted Rolled Oats.

– They come together in about 30 minutes.

Ingredients

Donuts
2 cups One Degree Organics Sprouted Rolled Oats
1/2 cup unsweetened non-dairy milk
1/2 teaspoon apple cider vinegar
1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
1/4 cup unsweetened applesauce
2 tablespoons almond or cashew butter
1 tablespoon maple syrup
1 teaspoon vanilla extract

Glaze
1/2 cup powdered sugar
1 tablespoon maple syrup
1 teaspoon unsweetened non-dairy milk

Instructions

Preheat oven to 350ºF. Lightly grease a donut pan. (These also work in a muffin pan.)

In a medium bowl, add non-dairy milk and vinegar. Stir to combine; set aside for 10 minutes.

Add oats to a blender or food processor. Blend until a fine flour forms, about 2 minutes.

In a large bowl, add oat flour, sugar, baking powder, baking soda, cinnamon, and salt. Stir to combine.

To the milk mixture, add applesauce, nut butter*, maple syrup, and vanilla. Whisk until fully combined.

Pour the wet ingredients into the dry ingredients. Stir until the ingredients are fully combined.

Add batter to each donut cup until full. (If using a muffin, fill each cup about 3/4 full.)

Bake for 15-17 minutes in a donut pan, or X minutes in a muffin pan. Let cool for 10 minutes.

In a small bowl, add glaze ingredients. Whisk until combined, then drizzle over donuts.

*Use a nut-free alternative like sunflower seed butter, if needed.
