Sprouted Oat Cookie and Vanilla Ice Cream Sandwich


It doesn’t get more classic than oatmeal and vanilla ice cream. Or at least we like to think so, since we combined the two into a delicious oat cookie ice cream sandwich. The maple syrup, cinnamon, and coconut sugar add a familiar sweetness to the comforting taste of our Sprouted Rolled Oats.

Yield: 14 cookies or 7 ice cream sandwiches

Ingredients

1 1/2 cups One Degree Organics Sprouted Oat Flour 
1 cup One Degree Organics Sprouted Rolled Oats
1/3 cup virgin coconut oil, as a liquid
2/3 cup pure maple syrup
1/4 cup coconut sugar
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt

Directions

Preheat the oven to 350°F.

In a mixing bowl, combine the coconut oil, maple syrup, coconut sugar, and vanilla and whisk to combine. Add in remaining ingredients and stir. Batter will be slightly runny. Scoop on to a parchment-lined baking sheet and bake for 12–14 minutes.

Allow the cookies to cool on the cookie sheet before making into ice cream sandwiches. Spread half the cookies with ice cream to taste and top with remaining cookies. Place back on baking sheet and place in freezer until ice cream is hardened to desired consistency. Keep frozen until ready to eat.
