Raspberry Coconut Steel Cut Oats

We love a big bowl of oats for breakfast and this exceptionally creamy and delicious recipe using our new sprouted steel cut oats is a great way to change up your breakfast routine!

Our sprouted oats are simply oat groats that have been sprouted and then sliced into smaller pieces. They take longer to cook than rolled and quick oats (approximately 30 minutes) but are excellent in texture and flavor. Steel cut oats can also be toasted slightly before cooking to enhance their flavor.

Ingredients

1 cup One Degree Organics Sprouted Steel Cut Oats
3 cups water
1 cup coconut milk
1/4 tsp salt
Zest and juice of 1 orange

Raspberry Sauce:
3 cups raspberries
1/3 cup maple syrup
1 Tbsp cornstarch

Directions

Bring water, coconut milk, and salt to a boil.

Add Sprouted Steel Cut Oats. Stir and reduce heat to low. Cover and simmer 20 – 25 minutes, stirring occasionally, until the oats are tender and creamy.

Remove from heat and stir in the orange zest and juice. Add additional coconut milk if desired.

To make the raspberry sauce, combine all ingredients in a medium saucepan. Bring to a boil and stir continually until sauce thickens.

Spoon the oats into bowls, top with raspberry sauce, and serve.
