Gluten-free Instant Oatmeal Mug Cake Recipe with One Degree Organics Sprouted Cacao Nib Instant Oatmeal

Ingredients

2/3 cups One Degree Organics Instant Oats (any flavor)
1 banana, peeled
1 tsp maple syrup or honey
2/3 cup non-dairy milk
1 tsp baking powder

Optional: 1 scoop of plant-based protein powder

Directions

Add all ingredients into blender and blend until smooth and mixed well.

Grease a microwave safe mug or ramekin with your go-to oil or some melted vegan butter.

Pour mixture into mug or ramekin.

Microwave for 1–3 minutes on high, until cake is fluffy and cooked through. (Test for doneness with a toothpick).

This recipe makes 2 servings (or one very generous portion!).

Notes

Double up on the chocolate flavor with our Sprouted Cacao Nib Instant Oatmeal and add semi-sweet chocolate chunks before microwaving. Garnish with freshly sliced strawberries or raspberries.

This recipe is portioned for one large mug or ramekin but scales up easily to feed more (just double or triple the recipe).

Because not all mugs or ramekins are the same size, make sure you do not put too much of the mixture in yours before cooking, so it does not overflow as it expands during the short microwave cook time. (We used a 10–12 ounce ramekin and poured in half of the mixture to make one satisfying snack-sized portion).

Don’t microwave? Bake your Instant Oatmeal Mug Cake in the oven. To make this recipe without a microwave, use an oven-safe ramekin instead of a mug and bake at 350 degrees F for 15–25 minutes. (Cake is cooked when fluffy and a toothpick poked in the center comes out clean).
