Fluffy Oat Flour Pancakes

Ingredients

1 ½ cups One Degree Organics Sprouted Oat Flour
1 tbsp baking powder
½ tsp salt
¾ cup non dairy milk + 2 tbspplus more as needed
3 tbsp maple syrup
½ tsp vanilla extract
1 tbsp lemon juice

Directions

In a large mixing bowl, combine oat flour, baking powder, and salt together.

 

Once the dry ingredients have been mixed together, whisk in the non-dairy milk, lemon juice, maple syrup and vanilla extract together until the batter is smooth. Do not over-mix the batter as it will affect the texture of the pancakes.

 

Warm a large non-stick pan on high heat. When the pan has heated up, turn the heat down to medium-low. Take about ½ to ⅓ cup of batter per pancake and pour it into the pan, spreading it out to form a disk shape. Cook for 2 minutes until small bubbles start to appear, then flip the pancake and cook for another minute or until it turns golden brown. Repeat this process until you have used up all the batter mixture.

 

Once the pancakes have cooled you can serve with coconut cream, fresh fruits & maple syrup.

Notes:
If your batter gets thick during the cooking process, which can happen you can add 2 tbsp of plant-based milk in between cooking batches or as necessary to loosen up the batter.

You can store cooked pancakes in an air-tight container in the fridge and simply warm up in the microwave when ready to eat.
