No Knead Spelt Dinner Rolls

 

No holiday dinner table is complete without dinner rolls and these fluffy rolls will be sure to not disappoint! Made with our Sprouted Spelt Flour and are super easy to make so they’re the perfect quick addition to a holiday spread.

Ingredients

2 ½ cups One Degree Organics Sprouted Spelt Flour
1 Tbsp instant yeast
1/4 cup sugar
1/2 cup warm water
2 cups bread flour
1 1/2 tsp salt
1 cup lukewarm non-dairy milk
4 Tbsp coconut oil, melted and cooled
2 VeganEggs or Flax Eggs
4 Tbsp vegan buttery spread, melted

 

Directions

In a small bowl, combine yeast, sugar and water and let sit until foamy, approximately 5 minutes. In a large bowl, combine flours and salt. Mix milk, coconut oil and VeganEggs in a separate bowl the add yeast mixture. Pour liquid ingredients over dry ingredients and mix until just combined. The dough will be wet and sticky. Cover loosely with a cloth and leave to rise in a warm spot until more than doubled in volume, approximately 2 hours.

Line a 9″ x 13″ baking dish with parchment paper, making sure there is an overhang on 2 sides.

When dough is ready, punch it down and turn it onto a well-floured surface. Divide into 12 equal pieces. Take a piece and flatten it down a bit with the palm of your hand into a loose rectangle. Now gathered the four edges or the rectangle together to form a purse-like shape. Pinch all the edges together. Turn the purse over in your hand and press the bottom of it on the working surface. Move the dough around in a small circular motion, shaping it into a smooth ball. Place bun smooth side up in the prepared dish and repeat with remaining dough.

Cover loosely with a cloth and let rise a further 30 to 45 minutes, until buns are almost doubled in size. Preheat oven to 375 degrees F. Before baking, lightly brush surface of rolls with melted buttery spread. Transfer to oven and bake until the surface is a golden brown and the rolls in the center sound hollow when tapped. Remove from oven and brush with more buttery spread if desired. Serve immediately or cool for later. These are best the day they are made but can be warmed in the microwave or oven the next day.
