Kathy’s Healthy Cake Pops with Sprouted Rolled Oats

Making these healthy cake pops together was on our list of things to do together on my most recent trip to visit Sondra and my grandkids. But time flies as they say, and somehow going to the garden center, playing outside, and reading stories filled our days from breakfast to bedtime. Each day we said, “We will make them tomorrow!” but before we knew it, I had to head back home.

Making healthy food together each day for our families is a tangible act of love. And even though we missed making these wholesome treats on this trip, I wouldn’t change a thing.

Because when it comes to the people you love, I have learned to be grateful for the time you have together—no matter how you spend it.

Sondra and her kids made these healthy cake pops after I flew home—and they had so much fun making them! With all the wholesome ingredients in the recipe—like sprouted rolled oats, dates, nuts, and seeds—these tasty treats are the perfect indulgence for kids of all ages! (Thank you, Sondra for the fantastic photos!)

1 cup One Degree Organics Sprouted Rolled Oats
1/4 cup One Degree Organics Flax Seeds
1/4 cup chia seeds
2/3 cup slivered almonds
10 pitted soft dates, chopped (if they aren’t fresh and moist, soak them first)
1/4 cup almond butter (or nut butter of choice)
1/4 cup maple syrup
1 cup vegan dark chocolate chips, melted for dipping or drizzling

Line a baking sheet with parchment paper and set aside.
In a food processor combine the sprouted rolled oats, chia seeds, flax seeds, and almonds. Pulse until you reach a coarse texture and the ingredients are well mixed.
Add in the chopped dates, almond butter, and maple syrup. Process until combined and a soft dough has formed.
With moist hands, roll dough into balls and place on a prepared parchment lined baking sheet.
If making into cake pops, insert cake pop sticks into each ball. Freeze for an hour or two before dipping into the melted chocolate. Top with sprinkles.
These also make great energy balls and can be enjoyed plain without dipping in chocolate.
