Gluten Free Sprouted Oatmeal & Apricot Bars

Healthy bars make a great on-the-go snack, easy bite at home, and a sweet way to beat the afternoon slump. We combined our gluten-free Sprouted Rolled Oats with our crunchy Sprouted Brown Rice Crisps to make a great crunchy base for our bars and added healthy golden flax, dried apricots, shredded coconut, and cashew butter for delicious flavor, anytime.

INGREDIENTS

2 1/2 cups One Degree Organics Sprouted Rolled Oats
3/4 cup One Degree Organics Sprouted Brown Rice Crisps
1 cup dried apricots, chopped
1/2 cup ground golden flax seeds
1/2 cup sweetened shredded coconut
1/2 cup lightly toasted cashew pieces
1/4 cup maple syrup
1/2 cup coconut sugar or brown sugar
1/4 cup plant-based buttery spread
1/4 cup smooth cashew butter
1 tsp vanilla extract

DIRECTIONS

Preheat your oven to 350 degrees F. Line a 9 x 9 square baking pan with aluminum foil and lightly grease.

In a large bowl, mix together oats, brown rice crisps, apricot pieces, ground flaxseed, shredded coconut, and cashew pieces.

Combine remaining ingredients in a medium saucepan and bring to a boil. Simmer for 2 minutes before pouring into cereal mixture. Toss well until evenly distributed. Transfer to baking dish and press firmly into an even layer.

Bake until light golden brown and fragrant, approximately 12 minutes. Cool completely in the pan before cutting into pieces with a sharp knife. Enjoy!
