Apple Cookies with Sprouted Spelt Flour

From overnight oats to apple crisp, I’m up for any excuse to add apples to a recipe. These small-batch Apple Cookies with Sprouted Spelt Flour were inspired by my enthusiastic appreciation of apples as an ingredient, my well-known love of cookies, and a recipe from one of my favourite plant-based recipe authors, Chef Ani.

Using One Degree’s Sprouted Spelt Flour, fresh apples, and coconut sugar in place of more refined and processed alternatives helps make these cookies a healthy treat your whole family will love. And the small batch means you can enjoy these guilt-free goodies while they’re at their fresh best—without having to work your way through the dozens of cookies many cookie recipes make.

Ingredients

1 cup One Degree Organics Sprouted Spelt Flour
1 tsp baking powder
1/8 tsp sea salt
1/4 tsp ground cardamom
1/8 tsp ground coriander
1/4 – 1/2 cup coconut sugar
3 Tbsp sunflower oil
3 Tbsp non-dairy milk
1 Tbsp ground flaxseed
1 tsp vanilla extract
1 medium size apple, peeled and diced
1/2 cup walnuts or pecans, chopped

Directions

Preheat oven to 350 degrees F, and line a baking sheet with parchment or a baking mat.

Measure your dry ingredients into a small bowl (spelt flour, baking powder, baking soda, sea salt, cardamom, and coriander), then stir together until well blended, and set aside.

Beat the coconut sugar, oil, milk, flaxseed meal, and vanilla in a large bowl or stand mixer until smooth.  On low speed (or by hand) mix the dry ingredients into the wet ingredients, stirring until just blended (do not over mix). Gently fold the diced apple and chopped nuts into the cookie dough.

Using a spoon or scoop, drop heaping spoonfuls of cookie dough onto prepared baking sheet.

Bake for 12 – 14 minutes. Remove cookies from the oven when they appear set and lightly golden. Give them a few minutes to cool on the baking sheet slightly before moving them to a cooling rack. (These tender, chewy cookies firm up as they cool. Giving them a chance to rest will keep them from falling apart, and you’ll be rewarded for your patience!). Enjoy!
