Sprouted Brown Rice Double Chocolate Peppermint Brownies
These rich, fudgy brownies are super easy to make, sweetened with maple syrup and full of whole food ingredients. Definitely guilt-free enough to be enjoyed year round!

1/4 cup One Degree Organics Sprouted Brown Rice Flour
1/2 cup gluten-free oat flour
1/2 cup unsweetened cacao powder
3 Tbsp tapioca starch
1/2 tsp salt
1 cup vegan chocolate chips
1 cup maple syrup
3/4 cup coconut butter, melted
1/3 cup almond butter
1 tsp peppermint extract
Preheat the oven 350 degrees F. Lightly grease a 9-inch square pan, set aside.
Whisk together the first 6 ingredients in a medium sized bowl. In a separate bowl, combine the remaining 4 ingredients. It is important that the liquid ingredients are at room temperature or lightly warm to keep the coconut butter from hardening.
Pour the liquid ingredients into the dry and stir well to combine. The batter will be thick. Pour into prepared pan and bake for 20-25 minutes.
Do not cut until the brownies have cooled for 45-50 minutes, then slice carefully with a sharp knife.
Store in an airtight container and warm slightly before serving.
