Easy Vegan Oat Flour Pie Crust (Flaky + Gluten-free)
Made with simple ingredients, this flaky oat flour pie crust is naturally gluten-free and comes together in just a few easy steps. It’s the perfect base for all your pies, from sweet to savory. The buttery flaky crust complements most flavors, and best of all, you only need 6 ingredients to make this.
Most pie crusts are made with butter and all-purpose flour; however, we thought that we would elevate the classic pie recipe by making it vegan with organic vegan butter and more flavorsome by using Sprouted Oat Flour.
Ingredients:
190 grams One Degree Organics Sprouted Oat Flour
40 grams arrowroot starch
1/8 tsp finely ground sea salt
115 grams vegan butter, cubed + chilled
2 tbsp maple syrup
6–7 tbsp chilled water

Directions:
Add flour, salt, and arrowroot starch to a food processor and pulse the ingredients together. Add in the butter and pulse until ingredients form a sand-like texture. Add tablespoons of maple syrup slowly while pulsing the mixture. Continue this process until you have added all the water and maple syrup. The mixture should form into a dough that is not too sticky or dry.
Remove the dough from the food processor and place the dough onto a piece of plastic wrap. Form the dough into a flat disk and chill in the fridge for 30 minutes. You can even store it overnight if needed.
Remove dough from the fridge when ready to roll. Allow the dough to rest for 15 minutes before rolling it, as it will be easier to manage.
Sprinkle a piece of parchment paper with flour, as well as the dough disk and the rolling pin. Roll the dough about 1/8” thick and 1” wider than the pie dish you will be using. The dough should be draped over the pie dish. Gently press the dough into the sides of the pie dish, and then place it back into the fridge and chill for 15 minutes.
Preheat oven to 350°F.
Take the pie crust out of the fridge and poke holes into the base of the crust, and use pie weights while baking to ensure the pie crust keeps its shape. Par-bake pie crust for 7-8 minutes before removing from the oven, filling with desired filling, and baking again in the oven.
