Vietnam’s vegetation is rich and diverse, reflecting the country’s wide range of climates, landscapes and soils. Down in the south, around the bustling city of Ho Chi Minh City (once known as Saigon), the weather stays hot all year round. It’s the kind of tropical climate cashew trees love, and it’s where our organic cashews grow. 1
The story of Organics More started back in 2011, when two people met in Vietnam. One of them had come over on a work placement to research the country’s organic industry. They quickly discovered a shared passion and set off on an ambitious mission to find Vietnam’s very first organic black pepper.
They traveled from plantation to plantation, but no matter how far they went, organic black pepper just wasn’t there to be found. Instead, they found something even better- an organic cashew farm, it wasn’t what they’d hoped to find, but it was something special. And just like that, their story headed down a completely different path. In 2014, The two founders made it official and launched Organics More Co., Ltd in Vietnam. Their driving belief was simple, organic farming could bring a better life to local farmers.
In 2018 Organics More built its own processing factory to make sure every cashew met the highest standards. Having everything under one roof means full control over quality, along with compliance with international standards like BRC and organic certification. When we visited Organics More in 2026, we were taken through their farms where we learnt about how this special ingredient is grown, harvested, and processed.
Despite its name and its spot in the snack aisle, the cashew isn’t a true nut at all. It’s a seed, and it grows in one of the most unusual ways in the plant world. Each cashew hangs from the bottom of a vibrant, bell-shaped fruit called the cashew apple, dangling beneath it like a small, curved ornament. Cashew apples ripen to bright red or sunny yellow, but as we learned on our visit, the color makes no difference- every cashew tastes the same.
A cashew apple is sweet, tangy and juicy and mainly used for jams, or turned into juice. On the farms where Organics More sources its cashews, nothing goes to waste, once the cashews are collected, the apples are returned to the earth as natural fertilizer, enriching the soil that will nourish the next season’s harvest.
During our visit, we had the privilege of meeting a farmer who has dedicated more than 15 years of his life to growing cashews. Walking among his trees, he spoke with quiet pride about his methods. The way his cashews are grown and harvested, he explained, requires no chemicals at all. Healthy soil, mature trees, and time-honored practices are all it takes to produce cashews of exceptional quality. It’s this kind of knowledge, passed down and refined over years of hands-on work, that makes the partnerships behind Organics More so meaningful.
As the cashew apples ripen, they loosen their hold on the branches and fall gently to the ground. That’s the signal that harvest has begun. From there, every cashew is gathered and separated from its apple by hand. It’s slow, deliberate work, but it ensures that only fully mature cashews are harvest.
Organics More's motive is bring clean food to as many tables as possible to enhance the livelihood of the farmers and to ensure the organic crops will continue to grow in hundred years from now.
Unlike most tree fruit, cashews can’t be eaten straight off the branch. Their shells contain urushiol, the same irritant found in poison ivy. That’s why cashews are never sold in their shells, and it’s also why no store-bought cashews are truly raw, even when the label says so. 2
Once harvested, the cashews begin a careful transformation. The freshly gathered cashews are spread across large tarps and left to dry beneath the open sky for two to three days. The warm sun draws out moisture and prepares them for processing. Next, the dried cashews are brought into the processing facility, where they’re sifted and sorted by size and quality, ensuring consistency in every batch.
Finally, the cashews are steamed at high temperatures. This essential step softens the hard outer shell, allowing it to be removed safely and cleanly, revealing the pale, smooth cashew inside. After the shell has been removed, they go through a colour sorting process, followed by oven drying. From there the cashews are cooled down and soon after the skins are removed before being tested, bagged, packed and sent to our facility for further testing before being added to our delicious recipes.
Cashews are a nutritional powerhouse. They’re an excellent source of copper, an essential mineral that supports energy production and healthy connective tissue, and they also provide plant-based protein along with magnesium, zinc, and iron. Their naturally creamy texture has made them a cornerstone of dairy alternatives, from silky nut milks to luscious plant-based cheeses and sauces. 3
Savor the goodness of this ingredient in our Sprouted Citrus Cashew Protein Granola. Entirely plant-based and packed with 10g of protein per serving, it’s the kind of breakfast worth waking up to.
