The topping is made with crunchy citrus cashew protein granola, oats, vegan butter, and lemon zest for an irresistible golden finish. Ingredients
Peach Filling
4–5 ripe peaches, chopped
1 tbsp lemon juice
1 tbsp chia seeds
½ cup salmon berries (or raspberries)
1 tbsp maple syrup (optional, for extra sweetness)
Zest of 1 lemon (optional)
Crumble Topping
1½ cups One Degree Citrus Cashew Protein Granola
2–3 tbsp vegan butter, softened
½ cup rolled oats, blended into a coarse flour
Zest of 1 lemon

Directions
Preheat your oven to 350°F (175°C).
In an 8×8-inch baking dish (or a similar-sized oven-safe dish), combine the chopped peaches, lemon juice, chia seeds, salmon berries, maple syrup (if using), and lemon zest. Stir until evenly mixed.

In a separate bowl, combine the granola, blended oats, vegan butter, and lemon zest. If your granola clusters are large, roughly chop them before mixing.

Sprinkle the crumble mixture evenly over the peach filling. Cover the dish with a lid or foil and bake for 30-40 minutes. Remove the cover and continue baking for 10 minutes, or until the topping is golden brown and crisp. Allow the crumble to cool for a few minutes before serving.
