No-Bake Pumpkin Peanut Butter Cornflake Clusters
These healthy no-bake cornflake clusters take minutes to make. You just warm up all of the wet ingredients in a pot, stir in the corn flakes, then plop them on a pan and let them cool in the fridge. The perfect treat for those last minute gatherings!
Ingredients
1 box One Degree Organics Sprouted Ancient Maize Flake or Sprouted Corn Flakes (~5 1/4 cups)
2/3 cup of pureed pumpkin
1 1/4 cups peanut butter
1 1/4 cups maple syrup
1/3 cup coconut oil, melted
1 Tbsp maple extract (can sub vanilla)
Directions:
Warm and combine all wet ingredients in a saucepan over low heat until melted. Stir in the corn flakes.
Line a baking sheet with parchment paper. Spoon two heaping tablespoons of corn flakes at a time on to sheet and press together into mounds.
Place in the refrigerator to harden for about 20 minutes. Consume within 1-2 days for optimal texture.
