Maple Brown Sugar Baked Oatmeal

This vegan maple brown sugar oatmeal bake is a wonderfully cozy, make-ahead breakfast for wintertime.

The recipe is sweet, comforting, and cozy. It’s a good thing to make on Sunday and then roll out for breakfast on Monday, Tuesday, and Wednesday. It requires very little work, and you can enjoy the leftovers warm or cold

Ingredients

2 cups One Degree Organics Sprouted Rolled Oats
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 tablespoon ground flax seeds
2 cups + ¼ cup non-dairy milk of choice, divided
1 teaspoon vanilla extract
¼ cup maple syrup
4 tablespoons brown sugar

Directions

Preheat your oven to 350F and lightly oil an 8 x 8 square or 2-quart rectangular baking dish.

Mix all ingredients except for the ¼ cup non-dairy milk and the brown sugar in a mixing bowl. Pour them into the baking dish. Top the oats with the brown sugar and gently drizzle the remaining ¼ cup non-dairy milk over the oats.

Bake for 40-45 minutes, or until the oatmeal is set and the top is looking lightly caramelized. Slice and serve with toppings of choice.
