Butternut Squash Black Bean Wraps

These colorful butternut squash wraps in our new Heritage Flour Tortillas are a great week night meal or work lunch. Use our Sprouted Corn Tortillas for a gluten-free version.


4 One Degree Organics Heritage Flour Tortillas
1/2 small butternut squash, seeded and cut into ½” cubes
1/2 can black beans, rinsed and drained
1 tsp olive oil
Cumin, to taste
Salt, to taste
1 small tomato, seeded and finely chopped
1/4 small red onion, peeled and finely chopped
10 cilantro sprigs, finely chopped
Lime juice, to taste


Preheat oven to 400 degrees F. Toss squash cubes with oil and salt. Bake until tender.

Meanwhile, cook beans in oil in a medium skillet. Season with cumin and salt taste.

Make a quick salsa with the tomato, onion, cilantro, lime juice and salt to taste.

Warm tortillas for 30 seconds per side in a preheated skillet. Top with squash, beans and salsa. Fold the bottom of the tortilla ¼ of the way up then fold the sides to meet in the middle to create a wrap.
