Sweet Potato Oat Waffles

Summer is the time we get to reconnect with Mother Nature, and these waffles have the perfect earthy tone to them. Our Sprouted Rolled Oats are extremely versatile once blended, lending a crisp exterior to the moist centre of the pureed sweet potatoes. Have them for breakfast with blackberry syrup, or turn them into a savoury snack with your favourite non-dairy cheese, balsamic drizzle, and roasted tomatoes.

Yield: 4 waffles

Ingredients

1/2 cup pureed cooked sweet potato/yam
1 cup One Degree Organics Sprouted Rolled Oats
1 cup nondairy milk
2 Tbsp ground golden flax
5 Tbsp warm water
1 Tbsp coconut oil, melted
1 Tbsp maple syrup
1/4 tsp baking powder
1/4 tsp salt
Dash cinnamon
Pinch nutmeg

Directions

Preheat your waffle iron. Place all ingredients in the jar of a blender and let sit for 10 minutes. Blend until smooth. Grease iron before pouring batter in. Cook until golden brown and crispy on the outside. Serve with maple syrup and your favourite toppings.
