These gluten free, vegan crepes have only 5 ingredients and make the perfect special breakfast that everyone can enjoy! And we love eating the leftovers with a little coconut butter and jam!
1 cup One Degree Organics Sprouted Quick Oats
1 1/2 cups non-dairy milk
1/2 Tbsp ground flax (we used golden flax)
1 Tbsp maple syrup
Pinch of salt
Place ingredients in blender and blend until smooth. Let batter sit for 5 minutes while you preheat a non-stick skillet over medium heat.
Grease pan with buttery spread or coconut oil. Stir batter well before pouring a thin layer in the center of the pan. Swirl the pan around to spread the batter to your desired size and thickness.
Cook until bubbles form on the surface and the edges are lightly golden. Flip and cook for one more minute.
Transfer to a serving plate and repeat with remaining batter. Garnish with your favorite toppings.
