Sprouted Spelt Chocolate Chip Cookies

Hot chocolate chip cookies straight from the oven with crispy edges, a soft center, the chocolate still gooey, savored with a glass of cold almond milk – it’s a special treat everyone will love, and remember.

When making cookies for Santa this year be sure to set out a few extra . . . these cookies tend to be quite addicting. And thankfully for Santa, they are both healthy and delicious.

One of the simplest treats, but still a timeless favorite. Santa will approve.

Ingredients

1 1/3 cup One Degree Organics Sprouted Spelt Flour
1/4 cup coconut palm sugar
1/2 tsp double acting baking powder
1/4 tsp salt
1/3 cup maple syrup + 2 Tbsp
1 1/2 tsp vanilla
1/4 cup coconut oil + 3 Tbsp, melted
1/2 cup vegan chocolate chips

Directions

Preheat oven to 350 degree F. Line two cookie sheets with parchment paper.

In a medium bowl stir together all dry ingredients. In a separate bowl combine the wet ingredients.

Add wet ingredients to dry and mix by hand until combined. Fold in chocolate chips.

Drop dough by tablespoonfuls onto prepared cookie sheets. Flatten slightly. Bake for 10-15 minutes until slightly golden.

Store in an airtight container. Makes 10-12 cookies depending on size.
