Flax & Spelt Potato Croquettes With Garlic Sauce

Thanksgiving is right around the corner! Along with the holidays comes plenty of delicious food, family, friends, and fun.

Whenever we cook a special meal we have a favorite tradition of each person choosing a dish to make, and for the day the kitchen becomes the most fun room of the house. This is the recipe my husband Danny often picks. We have fun baking all together, sharing what we’re thankful for and enjoying everyone’s company. There is nothing quite like food to bring everyone together!

This simple, healthy recipe makes a beautiful presentation and is a great way to use up leftover mashed potatoes from Thanksgiving. The garlic sauce adds a tangy, fresh taste.

INGREDIENTS

Potato Croquettes:
3 cups red potatoes, peeled and cooked
4 Tbsp olive oil, plus more for frying
4 green onions, thinly chopped
1 tsp salt
2 cloves garlic, crushed

Bread Crumbs:
1 1/2 cups One Degree Organics Flax & Spelt bread crumbs
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp basil
1/4 tsp oregano

Garlic Sauce:
1 cup Vegenaise
2 large garlic cloves, crushed
3 Tbsp fresh basil, finely chopped
1 lemon, juiced

DIRECTIONS

Bread Crumbs:
Place bread in the bowl of a food processor and pulse until finely chopped. Pour into a bowl and stir in seasonings. Set aside.

Potato Croquettes:
In a large bowl, mash the cooked potatoes and olive oil with an electric mixer. Stir in the green onions, salt and garlic. Mix well. Roll into 1 1/2 – 2 inch balls and coat in the prepared bread crumbs until completely covered.

Garlic Sauce:
In a small bowl whisk together all ingredients and mix well. Adjust to taste.

Drizzle a medium frying pan with olive oil. Fry croquettes over medium heat, until all sides are golden brown.

Serve warm and drizzle with garlic sauce.
